BBQ Chicken Pita Pizza



This is one of the simplest recipes. But that's why I love it! If there's a night when you don't have a lot of time, but you want to eat something good, yet healthy, this is a great choice! When I've made this, I bake myself one and Dave one also, and we usually have some left over. This is from Bill Phillips' book, Eating For Life.

Servings: 1
Preparation Time: 15 Minutes

Ingredients:
1 Whole-Wheat Pita
2 Tbsp barbeque sauce
1 Portion Cooked Chicken (about 4 oz.) Cubed
1 Slice red onion, diced
2 tsp Fresh Rosemary, Chopped (or 1/4 tsp dried rosemary)
1/4 Cup Reduced-Fat Mozzarella Cheese, Shredded

Directions:
1. Preheat oven to 425 degrees.
2. Place pita on a baking sheet and spoon barbeque sauce evenly over the pita. Top with chicken, onions, rosemary and cheese.
3. Bake for 10-12 minutes or until cheese is melted, the pizza is heated through and the pita crisp.

Lola's Notes: Feel free to put more vegetables on as desired. Dave and I like to put orange peppers on there for a bit more flavor.
