Potato Medley


This is a side that I've come to love this summer! You just cut up red potatoes and put them into some olive oil in a frying pan. Let them cook for a few minutes, then add whatever kind of vegetable you want. Tonight I put in yellow and red peppers, cut up tomatoes, and broccoli. It tastes really good with asparagus in there as well. Then put seasoning on it for taste!

You can put it with most anything but I put it with some barbeque chicken and baked beans.

  1. I can tell you are living at home by the beans on the plate. what a wonderful daughter you are to make dad a plate of beans. I will be making this recipe for dinne. it looks yummy and so healthy.
