Shrimp's the New Chicken

I've been LOVING shrimp lately. It's so light and simple for summer, yet is a great source of protein. The other night we made shrimp fajitas.

INGREDIENTS
Shrimp
Black Beans
Red, Yellow, and Orange Bell Peppers
Spike Seasoning
Diced Tomatoes
Corn
Onions
Salsa
Light Sour Cream
Avocado
Whole Wheat Tortillas
Low-Fat Cheese
Pepperoncinis

DIRECTIONS:
Put shrimp, bell peppers, and diced tomatoes in a large sauce pan. Season with Spike. When done, combine with corn, black beans, avocado, cheese, pepperoncinis, and wrap in tortillas for delicious fajitas.

SIDES:
I had asparagus and brown rice as a side. Yum.
