
DINNERS
Chicken shish kebabs with cucumbers, red onions, and orange peppers. Put them on the barbeque and squeeze some fresh lemon on them. I had it with peas mixed in with rice and Spike seasoning. Delicious combination!
Another was barbeque chicken with STUBS barbeque sauce. Along with it I had a salad of mixed greens, tomatoes, red onions, small diced zucchini, orange peppers, acvocados, and homemade ranch dressing. For some starches you can add a piece of good whole wheat sourdough bread. I know it sounds simple but in this hot weather it was so yummy!
A great side is cut up red potatoes and saute them in a sauce pan. Add brocoli and asparagus and season with Spike seasoning. It's my new favorite.
SNACKS
As a healthy snack I've been having cottage cheese with cantelope and strawberries and peaches. Or tuna with whole wheat crackers, rice cakes with almond butter, piece of turkey with a string cheese, yogurt mixed into cottage cheese.
BREAKFAST
My favorite hot cereal is Muesli. It's like oatmeal but has some other ingredients in it. I love eating that with blackberries, raspberries, and vanilla soy milk to add some more sweetness to it.
LUNCH
I've been cooking hot sandwiches lately. We've been eating wheat sourdough bread and we swear we'll never go back to regular store bought bread! It makes everything so much better! They taste amazing once you put the avocados, tomatoes, pepperoncinis, and lettuce on top of the melted (low fat) cheese and turkey with mustard.
Just a few ideas for you. I know it gets old trying to find new things to eat when trying to stay healthy. Share your ideas if you have some other good ones!
