I had these vegetables for dinner last night and they were so good I wanted them for breakfast! It also made it much nicer to only have to do the work once!
Here's what's in the medley:
- chopped carrots
- red pepper
- yellow pepper
- whole green beans
- Zucchini
I had fruit (oranges) and a few walnuts with it for breakfast, and salmon with it for dinner. If you aren't being too strict, or your husbands need something hardier, I put potatoes cut in fourths with the vegetables as well.
