Left Overs


I had these vegetables for dinner last night and they were so good I wanted them for breakfast! It also made it much nicer to only have to do the work once!
Here's what's in the medley:
  • chopped carrots
  • red pepper
  • yellow pepper
  • whole green beans
  • Zucchini
You put the carrots and green beans in a pan with water covering the surface first since they take longer to steam. Then once those are a bit softer, add the rest of the vegetables. Add a little more water and keep the lid on the pan. Once the water evaporates, let the vegetables cook a bit on the pan so they're slightly seared. It gives it an extra charred taste. I add 21 Seasonings for flavor. It's my favorite seasoning mix. It makes everything you cook taste better.

I had fruit (oranges) and a few walnuts with it for breakfast, and salmon with it for dinner. If you aren't being too strict, or your husbands need something hardier, I put potatoes cut in fourths with the vegetables as well.
